Jarrod,
Switch to Postfix instead of sendmail and you won't have the problem. Configure the dspam lmtp daemon to be the content-filter in Postfix and relay back to a Postfix listener on say port 10025 which will then deliver to Exchange. Don't have dspam deliver directly to Exchange.

Subject: Re: [dspam-users] messages sent through new postfix/dspam relay have = sign all over the message
Hi all,
I saw a post on this subject from 4 November 2005, and am having the
same problem. I've got a relay setup so mail comes in via sendmail,
which uses dspam as LDA, which then forwards through to MS Exchange
server. dspam is 3.6.6 with mysql driver.
As recommended by Alexei I've tried the 'broken lineStripping' option
in dspam.conf. I've also tried changing user preferences from having
signature in message, to using headers instead. Still the problem
persists. Has anyone else seen this?
Thanks,
Jarrod
